How did this type of tea come about?

Oolong tea was born out of necessity, as during the Ming dynasty there were significant restrictions on tea trade, and producers were forced to experiment with its processing. It is believed that blue tea originated in the Fujian area and then spread to other parts of China, with many famous varieties of Oolong tea produced in Taiwan.

Why is it blue?

In its processing, the final result has dark green tones and some bluish hues. Although in reality, when you brew it, its liquid color is amber.
